Introduction

If you ask most people about which they prefer, a gas or an electric range, most will likely recommend gas. There certainly are many advantages to a gas range. First of all, gas burners will result in a much more consistent source of heat that can offer an instant transition between high heat and simmer. Gas also costs less than electricity, which will result in a lower bill month to month. Power outages won't stop your gas model from cooking, and a lot of cooks simply like having a quick, controlled source of fire.

Gas ranges aren't without their downsides, however. They're much harder to clean than electric ranges, as there are more nooks and crannies for crumbs and debris to hide in. Also, electric coils are more efficient at transferring heat to cookware quickly: it takes gas ranges longer to boil water, on average.

The oven part of a gas model also might not compare favorably to its electric counterpart. Gas ovens can be very inconsistent if you're not also employing convection. Some gas ovens also have problems with granularity, as they can't control gas flow as well an an electric oven can control its coils.
